{"id":403,"date":"2020-03-20T17:50:13","date_gmt":"2020-03-20T17:50:13","guid":{"rendered":"https:\/\/www.greatwolf.com\/blog\/?p=403"},"modified":"2020-09-30T18:34:57","modified_gmt":"2020-09-30T18:34:57","slug":"simple-sweet-try-this-mini-pumpkin-cheesecake-recipe","status":"publish","type":"post","link":"https:\/\/www.greatwolf.com\/blog\/simple-sweet-try-this-mini-pumpkin-cheesecake-recipe\/","title":{"rendered":"Easy Mini Pumpkin Cheesecake Recipe to Try with Your Kids"},"content":{"rendered":"<p><img fetchpriority=\"high\" decoding=\"async\" src=\"\/blog\/wp-content\/uploads\/2019\/01\/3n6a6493_w1024-1024x683.jpg\" alt=\"Mini no-bake pumpkin cheesecakes in front of mini pumpkins\" width=\"1024\" height=\"683\" \/><\/p>\n<p>At <a href=\"https:\/\/www.greatwolf.com\/\">Great Wolf Lodge<\/a>, we believe that Halloween should offer something for everyone in the family to enjoy\u2014including our no-bake pumpkin cheesecake recipe.<\/p>\n<p>Our talented culinary teams developed their own special easy no-bake dessert recipe that\u2019s both tasty and easy to make!<\/p>\n<p>Here\u2019s the recipe to enjoy at home:<\/p>\n<h2>No-Bake Pumpkin Cheesecake Cups<\/h2>\n<p>Servings: 10 (9 oz. servings)<\/p>\n<p>Crust:<\/p>\n<ul>\n<li>1 \u00bd graham crackers (break into crumbs)<\/li>\n<li>\u00bc cup unsalted butter, melted<\/li>\n<li>1 tablespoon sugar<\/li>\n<li>2 tablespoons brown sugar<\/li>\n<li>1 tablespoon pure vanilla extract<\/li>\n<\/ul>\n<p>Filling:<\/p>\n<ul>\n<li>1 8 oz. package cream cheese (softened to room temperature)<\/li>\n<li>1 15 oz. can pumpkin pie filling<\/li>\n<li>1 3 oz. package sugar free cheesecake-flavored instant pudding mix (vanilla may be substituted as well)<\/li>\n<li>1 14 oz. can sweetened condensed milk<\/li>\n<li>1 12 oz. container frozen whipped topping<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<ol>\n<li>Blend cracker crumbs with melted butter, sugar, brown sugar, and vanilla. Mix until well combined.<\/li>\n<li>Spoon the crumbs into individual 9 oz. glass cups (if you prefer, plastic cups work as well). Refrigerate crust to set while making filling.<\/li>\n<li>In the bowl of a stand mixer with the paddle attachment, beat the cream cheese until light and creamy.<\/li>\n<li>Add the pumpkin pie filling and pudding mix and beat until completely mixed, scraping down the sides and bottom of the bowl to ensure that all ingredients are well combined.<\/li>\n<li>Add the sweetened condensed milk and continue mixing until well combined.<\/li>\n<li>Change your stand mixer attachment to the wire whisk.
